2 sticks unsalted butter
2 1/2 cups packed brown sugar
6 oz. unsweetened chocolate
4 large eggs
2 teaspoons vanilla extract
2 cups flour

Directions
Preheat the oven to 325. Line a 9×13″ pan with foil, spray with cooking spray and set aside.
In a large microwave safe bowl, combine the butter, brown sugar and the chocolate, microwave on high for 1 minute, then stir. If the chocolate is not softened continue to microwave it at 10 second intervals, remove the bowl before the chocolate is completely melted.
Beat the eggs and vanilla into the chocolate mixture, then mix in the flour and the salt. Do not over-mix. Pour the batter into the prepared pan and smooth the top. Bake for 30-40 minutes, brownies are done when a toothpick inserted into the center comes out almost clean, you want there to be a few “crumbs” on the toothpick.
Decorating the Brownies
Once the brownies have cooled, remove the brownies from the pan and place in a large bowl. Break up the brownies and mix so that the crunchy edges are mixed with the softer center. This step is similar to making cake pops.
Roll the brownies into balls and place the balls on a tray. Once all of the brownies are rolled into balls place the tray in the refrigerator to chill for 30 minutes.
Next, melt the chocolate melting wafers according to the package directions. Then dip the brownie balls into the melted chocolate and set on a tray lined with a silphat or non-stick surface.
After all of the brownies are dipped in the dark chocolate melt the white chocolate.
Place the white chocolate in a piping bag or skip this step and use a spoon. Pipe or drizzle the white chocolate over the brownie bites then top with a plain red M & M’s. Alternately, you could use red and green melting wafers to make holly leaves and berries to make it a little more decorative.
Notes
You can also use a brownie mix or store-bought brownies to make the balls.
Dark chocolate, melting wafers or almond bark can be used to cover the brownie balls.
