Cinnamon Walnut Coffeecake

Good morning! How was your weekend? It certainly looked like a wild one weather wise, hopefully you were not affected by it. We had beautiful, sunny weather but I can already feel a little of Fall in the air. Or maybe that it just my imagination as Fall is 40 plus days away. 

I made an easy and delicious Cinnamon Walnut coffeecake this weekend that would be perfect to eat now and to keep in your file for the upcoming holidays. I also think it would be a great cake to make and give as gifts. 

Cinnamon Walnut Coffeecake 

Recipe from An Italian in My Kitchen

Topping

3/4 cup granulated sugar

1 Tablespoon ground cinnamon

3/4 cup chopped walnuts

Batter

3 cups of flour

11/2 teaspoons baking powder

11/2 teaspoons baking soda

1 teaspoon salt

3/4 cup softened butter

11/4 cup of sugar

3 eggs

11/2 cups Greek yogurt

11/2 teaspoon vanilla extract

Preheat oven to 350. Prepare a 10″ tube pan with cooking spray. In a small bowl combine the topping ingredients and set aside. 

In a small bowl whisk together the flour, baking powder, baking soda and salt, set aside. In the bowl of a stand mixer cream together the butter and sugar on medium speed until the mixture is light and fluffy. The add the dry ingredients alternately with the Greek yogurt and vanilla to the creamed mixture, mix with a wooden spoon until smooth.  Spread half the batter into the prepared pan, then spoon 3/4 of the topping over the batter. Top with remaining batter, smooth out and then top with the remaining topping. 

Bake cake for 50-60 minutes. After 50 minutes if the cake is not done but is getting too brown, top with foil until done. Test for doneness with a toothpick. Cool and enjoy.

  3. I like the look and sound of this cake – the addition of the Greek yogurt must make it moist and of course 'they' are telling us lately just how healthy walnuts are. I always consider cake with healthy ingredients added can't be all bad for one, haha!
    Still hot here in NC but already a much needed morning shower has come and gone – more humid now but the garden did need a good soaking. Fall can't arrive too soon for me!
