Easy Chia Pudding With Roasted Cherries and Chocolate Sprinkles

Ingredients

Roasted Cherries

1 pint fresh cherries or frozen cherries, pitted

2 tablespoons of sugar

1/4 cup of water

Chia Pudding

6 tablespoon of chia seeds

2 cups of almond milk, oat milk or any other non-dairy milk

12 Tablespoons of honey or maple syrup( depending on your taste)

1/4 teaspoon vanilla extract

Garnish with dark chocolate sprinkles or mini chocolate chips

Instructions

For Roasted Cherries

Preheat oven to 450. In a small bowl mix the cherries and the sugar, pour onto a pan then drizzle with the water.

Bake for 10-15 minutes.

I watch them and like to take them out when there is still a lot of liquid but the cherries are soft. If you like them more caramelized than bake them longer, closer to 15 minutes.

For Chia Pudding

In a small bowl add non-dairy milk, the chia seeds, vanilla extract, and the honey, maple syrup or other sweetener, stir well making sure all of the seeds are mixed in. Let sit for 5 minutes then whisk again to be sure that there are no pockets of chia seeds or any that have sunk to the bottom.

Pour into 4 individual glasses or jars. Cover with plastic wrap.

Place the chia pudding in the refrigerator overnight.

Remove pudding from refrigerator and top the chia seed mixture with cooled roasted cherry compote and a sprinkle of chopped chocolate.

Notes

Note: If using frozen cherries defrost them first, then pour off the liquid before following the roasting directions. Otherwise you will have too much liquid and end up with a soupy mess.
