1/2 cup unsalted butter
2 ounces unsweetened chocolate
2 large eggs
1 cup white granulated sugar
3/4 cup all-purpose flour
12 Oreo cookies, chopped, divided
1/2 cup 60% cacao chocolate chips (Ghirardelli), melted, for drizzling
Halloween sprinkles, for topping
Instructions
- Heat the oven to 350°F. Line an 8×8-inch square pan with parchment paper, spray with nonstick cooking spray, and set aside.
- In a medium saucepan over low heat, melt the butter and unsweetened chocolate together, stirring until smooth. Remove from the heat and cool for a few minutes.
- Stir in the sugar, vanilla extract and eggs.
- Fold in the flour, then most of the chopped Oreos, saving a small handful for the top. Stop when a few streaks of flour remain. Do not overmix.
- Spread the batter evenly into the prepared pan. Then dot the top with the remaining Oreo cookies. Bake at 350°F for 30 minutes. A toothpick in the center should come out with moist crumbs. Do not overbake.
- Cool completely on a wire rack.
- Melt the chocolate chips and drizzle over the cooled brownies. Sprinkle with Halloween sprinkles while the chocolate is wet. Let set, then cut into squares with a sharp knife.
