Peach and Blueberry Crisp

Good morning friends! How are you? Did you survive the storms this weekend? I hope that you have power are that you did not have any flooding. We had a lot of rain but thankfully no flooding in my area, the power flickered on and off a few times but luckily stayed on. The the sun came out and it has been hot, hot, hot and humid ever since.

I had a great weekend. My niece and I had a sleepover on Friday and we made homemade spaghetti and meatballs, and brownie sundaes with hot fudge. Saturday and Sunday I unpacked boxes. Since the wait and the timeline for cabinets and supplies seems to get longer and longer I have resided myself to the fact that I am not going to see a new kitchen for at least 8 months or longer and I cannot live without baking so I unpacked all of my pans, mixer, etc and I am ready to start baking for Fall and of course for Christmas.

I didn’t need any of my supplies for this easy and delicious blueberry and peach crisp. Some people call this crumble but I’ve always known it as a crisp. If you know if there is a difference between a crumble and a crisp please let me know.

Peach and Blueberry Crisp

Ingredients

5 peaches, pitted and cut into chunks

1 cup blueberries, washed

1/2 lemon, zested and juices

1/2 cup sugar

1/4 cup flour

1/8 tsp ground cinnamon

Topping

1/2 cup all purpose flour

3/4 cup old fashioned oats

1/2 cup brown sugar lightly packed

1/2 tsp kosher salt

1 tsp. cinnamon

1 stick cold unsalted butter cut into small chunks

Directions

Preheat the oven to 350. Lightly grease a 8 inch pan and set aside.

For the fruit, mix all of the ingredients in a large bowl and pour into the prepared pan or into small ramekins.

For the topping: Place all topping ingredients into a medium size bowl. Using a pastry blender, fork, two knives or your hand mix the ingredients together until the butter is incorporated and the mixture resembles small pea size crumbs. Pour topping onto the fruit and bake for 40-45 minutes, the mixture should be bubbly around the edges. Remove from the oven and let cool for a bit before serving. You can garnish with a scoop of ice cream or whipped cream.
