Strawberry Feta Tossed Salad with Pesto Vinaigrette an easy, light and delicious meal. 

Today I want to share a salad recipe that I  have been eating all summer long, Strawberry Feta Tossed Salad with Pesto Vinaigrette. This salad is easy to make, has a limited amount of ingredients, is something that you can actually “prep” ahead and keep in containers to toss together when you are ready and is even a great side for most summer meals and parties.

Another great things about this salad is that you can customize it, if you don’t have strawberries use raspberries, or blackberries.

If you don’t like onions than leave them off. No walnuts in the pantry, add pecans instead. The possibilities are endless and frankly the “star” of the salad is the easy pesto vinaigrette.

How to Make Strawberry Feta Tossed Salad with Pesto Vinaigrette

Ingredients

lettuce

onion

feta cheese

walnuts

pesto vinaigrette

Strawberry Feta Tossed Salad with Pesto Vinaigrette

Six Servings

Ingredients

For the salad

6 cups of torn lettuce leaves

2 cups fresh strawberries, sliced

1/2 small red onion, sliced

4 oz. crumbled feta cheese

1/2 cup chopped walnuts

Directions

Place all ingredients in a large bowl and toss. At this point you can also add the dressing if you want and toss it again. I like the dressing on the side so that each person can add their own to their salad.

 Pesto Vinaigrette

Makes 3/4 cup

Ingredients

1/2 cup remade pesto

3 tablespoons white wine vinegar

1 tablespoon fresh lemon juice

1/4 cup extra virgin olive oil

salt and pepper to taste

Directions

Place the pesto, vinegar, and lemon juice in a bowl, slowly add the vinegar and whisk until combined. Or add all of the ingredients to a jar or shaker and shake until combined. Refrigerate until ready to use.

  3. I’m more of a ranch fan but the pesto vinaigrette sounds delicious. Sadly, strawberry season is long ober and blueberries and raspberries don’t grow here so the imported ones are very expensive and tend to spoil really quickly.
