Hershey's Perfectly Chocolate Cake

A family favorite, the Hershey Perfectly Chocolate Cake. Moist and delicious and perfect with or without frosting.

Ingredients
  

  • 2 cups sugar
  • 13/4 cup all-purpose flour
  • 3/4 cup Hershey's cocoa powder
  • 11/2 tsp baking powder
  • 11/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
For the Buttercream Frosting
  • 11/2 cups butter(3 sticks) room temperature
  • 41/2 cups powdered sugar
  • 3-4 tbsp heavy cream
  • 11/2 tsp vanilla extract

Method
 

  1.  Heat oven to 350°F. For a 2 layer cake, grease and flour two 9-inch round baking pans. For cupcakes, line a cupcake pan with liners, set aside.
  2. Stir together sugar, flour, HERSHEY’S Cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). 
  3.  FOR CAKE: Pour batter into prepared pans.  Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks
  4.  FOR CUPCAKES: Bake cupcakes 22-25 minutes. Remove cupcakes from the baking tin and let cool on wire rack.
  5. Make frosting of your choice and decorate or simply dust with powdered sugar and enjoy.
For Buttercream Icing
  1. In the bowl of a stand mixer fitted with a paddle attachment whip the butter for 7-8 minutes until light and fluffy. Scrape the sides of the bowl frequently. Add the powdered sugar, vanilla, and heavy cream, mix on low until everything is incorporated and then increase the speed to medium, beat until light and fluffy. 
To Decorate Cupcakes
  1. Add a few drops of food coloring to your frosting or a little dark green gel food coloring. This is a bit trial and error until you get the desired color. Once you have the color green that you like, add the frosting to a piping bag fitted with a large star tip. Pipe the frosting onto the cupcake, you can make whatever design you like. Then "dust" with a few sprinkles.

Notes

This recipe is easy and delicious. You can add extra flavor with chocolate chips or crushed candy canes.
