Good morning, or should I just say, morning? I am sure that for the many who are suffering in Texas it is not a good morning, unless you count the fact that they are alive. I am one of those people that is glued to the TV when there is an “event” either natural disaster or whatever. I live and have lived in a hurricane zone for the last 17 years so weather events are important to me.
My heart is broken for those who are suffering and I hope that the rain stops soon so that they can all go home and assess the damage and move forward.

The weather here is still hot so my mind has not switched to Fall food, like anything including pumpkin, but don’t worry my self imposed moratorium will be over September 1st.
This week I made a scrumptious Beet, Blue Cheese, Bacon Salad. Those are the main ingredients, it also had oranges, red cabbage and pecans and I have to tell you that although the combination might seem a little strange it is delicious, a little sweet, a little crunchy, a little salty and and a little bit sour from the citrus. I made a simple vinaigrette from my homemade red wine vinegar but you could use any dressing that you like.

Beets, Bacon, Blue Cheese & More Salad
6-8 cups romaine lettuce, spinach or spring mix
6 strips of bacon cooked crisp and chopped
1 orange cut into pieces
1/3 cup chopped pecans
8-10 small beets roasted and cut into pieces
6 ounces blue cheese crumbled
1/2-3/4 cup chopped red cabbage
Arrange lettuce, or spinach on a platter or a bowl. Then add the bacon, orange pieces, pecans, beets, blue cheese and cabbage. You can arrange it is symmetrical lines or you can just pile it up in the bowl and mix. Add your favorite vinaigrette or dressing of your choice and enjoy.

It's going to take a long time for southern Texas to repair the damage–all the water has to go away first (well, first it has to stop raining, and then the water has to go down). Best wishes to them as they work through it.
Your salad looks wonderful. My kid LOVES beets, and this looks like a great light meal for a hot day. Like you, we still have full-on summer.

I am pinning this as my daughter loves beets! We are expecting a houseguest later this week and it will be perfect. Thank you for your prayers. We have both friends and family members near the Texas coast. They know our doors here at Storybook Cottage are open to them. The rain has stopped today but due to start up again and we are specifically praying that the levees hold.
