For those of you who do not know, cheese is one of the four food groups, at least in my house, especially in the Fall & Winter. When the days are long and we need a little comfort we make this This delicious baked cambozola cheese with pecans and cranberries is delicious as a starter cheese, as an appetizer or even for dinner. It can be made for a crowd or scaled back for one, like a “girl’s dinner.
Seriously, what could be better than a ramekin of smooth creamy, melted blue cheese topped with cranberries and pecans and a glass of wine? Maybe serving blue cheese pumpkin macaroni and cheese for dinner?

Baked Cambozola with Pecans and Cranberries
What you need to make baked blue cheese
- 1/2 cup roughly chopped pecans
- 1/2 cup dried cranberries
- 2 teaspoons packed light brown sugar
- 1/4 teaspoon curry powder
- pinch of kosher salt and black pepper
- 1 pound Cambozola Black Label cheese, rind removed and cubed
- Sliced apples, pears and crackers of your choice for serving

How to Make Baked Cambozola
- Preheat oven to 400 F. Combine pecans, cranberries, curry, brown sugar and pinch of salt and pepper in a small bowl. Set aside.
- Place the cambozola on a cutting board. Using a sharp knife remove the rind from the cheese and cut into cubes.
- Put the cheese in a one quart baking dish and top with the pecan mixture.
- Bake until the cheese melts and the nuts are toasted and golden brown, about 12 minutes.
- Serve with sliced apples, pears, crackers or wide slices of bread.
What is cambozola cheese
Cambozola is a soft ripened buttery cow’s milk cheese with the barest hint of blue veining. This buttery cheese has a smooth creamy texture and is perfect as an appetizer or used on open-faced sandwiches toasted or un-toasted, your preference.

Variations
Don’t feel like baking your cheese? Serve it at room temperature with chopped dried fruit and nuts.
Serve with roasted grapes instead of cranberries or with chopped dates and walnuts.
Want to make something fancier? Wrap the cambazola cheese in puff pastry, place on a parchment paper lined tray and bake at 400 for roughly 15-20 minutes.
