Today I’m sharing  a sweet little blast from the past, a classic old fashioned banana cake with cream cheese frosting. This cake is the kind of dessert that takes you back to simpler times with family and friends; it brings me right back to my grandmothers table. I’ve made this cake many times and it is always a family favorite. Grab your mixing bowl, and your spotted, brown bananas and let’s bake.

What You Need to Make Banana Cake with Cream Cheese Frosting

Directions for Banana Cake

  • Preheat oven to 375. Line an 8 in pan with parchment paper and spray with non-stick cooking spray.
  • Whisk together flour, baking powder, an salt, set aside.
  • Using an electric mixer, beat oil, butter, and sugar. Beat in eggs and egg whites one at a time, mixing well after each addition. Mix in vanilla.
  • In a separate bowl, mash bananas with milk. Set aside.
  • Gradually add half of dry mixture into the  butter mixture. Mix in bananas. Mix in remaining dry ingredients. Pour into pan. Bake 40-45 minutes or until a toothpick inserted in center comes out clean. Cool cake in pan on wire rack.

Recipe Variations

  • Chop up some walnuts or pecans and fold them into the batter for a nice crunchy texture that pairs beautifully with the soft cake.
  • For a chocolatey twist, sprinkle some mini chocolate chips into the batter. Because everything’s better with chocolate, in my opinion.
  • Add a teaspoon of cinnamon and a pinch of nutmeg to the batter for a warm, cozy flavor.
  • Try swapping cream cheese frosting for a simple vanilla glaze or a whipped buttercream if you want something lighter or sweeter.
  • Double the recipe and make two layers of cake, then stack them with frosting in the middle.

What To Serve With Classic Banana Cake

  • A warm cup of coffee or a nicely brewed tea pairs well with this banana cake.
  • A scoop of vanilla ice cream on the side turns this cake into a special dessert that’s perfect for informal celebrations.
  • Top your slice of cake with a handful of fresh berries like raspberries or strawberries.
  • A drizzle of caramel sauce takes the flavor level up a notch.

How to store cake

  • Keep leftover cake in an airtight container in the fridge for up to 4 days. Let the cake come to room temperature before eating for the best texture and flavor.
  • For longer storage, wrap the cooled unfrosted cake tightly in plastic wrap and then in foil or place in airtight container. Freeze for up to 2 months. Thaw in the fridge overnight, frost and enjoy.
