Good morning friends, I am joining my friend Sheri for our monthly series, “Sweet treats for your Sweet tooth.” Each month we share our favorite version of a sweet treat, everything from cookies, bars, cakes, puddings and more. If you don’t know Sheri she is a professional photographer and the writer of the Sheri Silver blog. Today she is sharing No-Bake Tahini Bites and I am sharing an easy Chocolate Date Bark recipe.

Chocolate Date Bark
You may have seen this healthy treat on social media, it went viral because of Lina from That Health Junkie. It’s made with sweet medjool dates, a layer of peanut butter, chocolate, crunchy nuts and a sprinkle of flakey sea salt. Some have likened this delicious treat to a Snickers bar. I won’t go that far but I will tell you that the caramel-like flavor of the dates paired with the peanut butter and peanuts makes a delicious healthy dessert.
Date Bark Ingredients
This simple recipe is made with just 5 ingredients
.
- 12 oz. package of fresh Medjool Dates
- 1/2 cup peanut butter, creamy or crunchy
- 3/4 cup melted semi-sweet chocolate, milk chocolate or dark chocolate chips
- 1/2 cup chopped peanuts
- Maldon sea salt flakes
How to Make Date Bark
- Line a baking sheet with a Silphat baking liner or parchment paper
- Cut the Medgool dates down the center, not all the way through but enough to remove the pit and to lay them flat. Place the pitted dates side by side on the tray into a rectangle shape.
- Use the bottom of a cup or a rolling pin to press the dates down into an even layer, use a piece of parchment paper or another sulphate liner to keep the dates from sticking to the cup.

- Drizzle or spread the peanut butter over the top of the flattened dates. Use an offset spatula to evenly spread and smooth the creamy peanut butter over the dates.

- Place the chocolate in a microwave-safe bowl and heat at 30-second intervals on 50% power. Stir well after each 30 seconds. When the chocolate is 90% melted remove and stir until creamy and smooth. You could also melt the chocolate in a double boiler.

- Pour the melted chocolate over the top of the peanut butter layer and spread in an even layer with a knife, spatula or the back of a spoon.
- Sprinkle the chopped peanuts over the top of the chocolate and then add a pinch of flaky sea salt.
- Place in the refrigerator for 20-30 minutes or until firm.
- Remove from the refrigerator and cut or bread into pieces.

Variation’s & Tips
- If you don’t like peanut butter or have a peanut allergy you can still make homemade chocolate date bark, just use cashew butter or almond butter instead. Then sprinkle with chopped cashews, pecans, or crunchy almonds.
- For a nut-free version, use seed butters. Sunflower seed butter is one of my favorites.
- There are lots of dates but chewy medjool dates are best, they have the best texture and natural sweetness.
- Another option is to make stuffed dates, open the dates, add a little peanut butter, drizzle with chocolate and crushed peanuts and then place in the refrigerator until set.
How to store date bark.
Store date bark in an airtight container or wrap in plastic wrap for 1-2 weeks.
