Today I’m sharing a fun and easy holiday treat, just in case you were looking for a last minute treat to serve your guests this week. Mini Christmas Pudding Brownie Bites!

Christmas baking and candy making is one of my favorite parts of the holiday. I have piles of recipes that I want to make every year but sadly I run out of time and never get to them all.

Christmas pudding brownie bites is one recipe that always finds its way to the top of the list. Not only because they are cute but also because they are so easy. They are just baked brownies rolled into balls, dipped into chocolate and decorated like a traditional English Christmas pudding. Basically a brownie “cake pop.” These sweet treats are sure to become a family favorite.

How to Make Christmas Pudding Brownie Balls

  • Make a pan of brownies, you can use your own brownie recipe, or make them from a box.
  • Let the brownies cool, then dump them into a bowl, mix together. Take a walnut size piece of brownie and roll it into a ball.
  • Melt chocolate melting wafers, or your favorite chocolate, dip in the brownie balls. Set on a tray to harden.
  • Next, melt the white chocolate and spoon it onto of the chocolate covered brownie balls, then top with a red M&M.

I think these little fudgy bites are cute and delicious! Add them to your Christmas cookie tray and candy gift boxes for family and friends. Or make them to serve along with your festive desserts.

How to store Mini Christmas Puddings

You can keep the mini Christmas Pudding Brownie Balls in the refrigerator in an airtight container for a few weeks or in the freezer for a few months.

2 sticks unsalted butter

2 1/2 cups packed brown sugar

6 oz. unsweetened chocolate

4 large eggs

2 teaspoons vanilla extract

2 cups flour

1/2 teaspoon salt

Chocolate to Cover and Decorate

Ghiradelli Melting Wafers, Almond Bark or Chocolate White and Dark Chocolate

Instructions

Directions

Preheat the oven to 325. Line a 9×13″ pan with foil, spray with cooking spray and set aside.

In a large microwave safe bowl, combine the butter, brown sugar and the chocolate, microwave on high for 1 minute, then stir. If the chocolate is not softened continue to microwave it at 10 second intervals, remove the bowl before the chocolate is completely melted.

Beat the eggs and vanilla into the chocolate mixture, then mix in the flour and the salt. Do not over-mix. Pour the batter into the prepared pan and smooth the top. Bake for 30-40 minutes, brownies are done when a toothpick inserted into the center comes out almost clean, you want there to be a few “crumbs” on the toothpick.

Decorating the Brownies

Once the brownies have cooled, remove the brownies from the pan and place in a large bowl. Break up the brownies and mix so that the crunchy edges are mixed with the softer center. This step is similar to making cake pops.

Roll the brownies into balls and place the balls on a tray. Once all of the brownies are rolled into balls place the tray in the refrigerator to chill for 30 minutes.

Next, melt the chocolate melting wafers according to the package directions. Then dip the brownie balls into the melted chocolate and set on a tray lined with a silphat or non-stick surface.

After all of the brownies are dipped in the dark chocolate melt the white chocolate.

Place the white chocolate in a piping bag or skip this step and use a spoon. Pipe or drizzle the white chocolate over the brownie bites then top with a plain red M & M’s. Alternately, you could use red and green melting wafers to make holly leaves and berries to make it a little more decorative.

Notes

You can also use a brownie mix or store-bought brownies to make the balls.

Dark chocolate, melting wafers or almond bark can be used to cover the brownie balls.
