Almond milk Panna Cotta with fresh berries for two, an easy and delicious dessert that is vegan and non-dairy.

Good morning friends,  I hope you are having a great morning! It has been sunny for two days here after what seems like weeks of rain. Sunshine and blue skies make everything seem better.

I wanted to share a quick and delicious dessert with you, Panna cotta which is Italian for “cooked cream” is a dessert that is typically made from milk and cream but I actually don’t drink dairy anymore so I decided to try making it with nut milk and to my surprise it came out perfect. That said nut milk is obviously not as rich as full-fat milk and cream, but it is a great alternative if you have dairy issues or you are vegan.

For this recipe you only need a few ingredients, almond milk, unflavored gelatin, sugar and almond extract. If you are not familiar with gelatin this is not Jello, you find unflavored gelatin in the baking aisle and although are generic brands, I use Knox  but any unflavored gelatin will work, also because there are so few ingredients please use good extract,

it costs a little more but it is with it. On that not, you can often find good spices and extracts in the baking aisle of TJ Maxx HomeGoods and Marshalls.

Almond Milk Panna Cotta with Fresh Berries

Ingredients

11/4 cups of almond milk divided

1 teaspoon unflavored powdered gelatin

3 tablespoons sugar

1/2 teaspoon extract

For the Berry Compote

1/2 a cup of raspberries and blueberries mixed

2 tablespoons water

1 teaspoon of sugar

squeeze of lemon

Garnish with fresh berries

Directions

Add the 1/2 cup of the almond milk to a small saucepan then sprinkle the gelatin on the top. Let it sit for 5 minutes. Then turn the heat on medium and cook and stir until the gelatin dissolves. Do not let the milk boil. This step will take about 3 minutes.

Once the gelatin is dissolved add the remaining almond milk to the pan along with the sugar, continue cooking while you are stirring the mixture for another 3-5 minutes.

When the sugar is dissolved turn off the heat. Stir in the extract. Pour the mixture into 2 serving dishes, I used . Then chill the mixture for at least 4 hours or overnight.

Berry Coulis

In a small saucepan add the berries, sugar and a squeeze of lemon juice. Cook in a small pan until the berries start to get soft. Once soft, let cool then top the Panna cotta with the berry coulis and fresh berries. Enjoy!

  1. I’m making this recipe now. Your instructions on when to add the sugar are confusing. You state “once the sugar is dissolved” two times. When was it added? I assumed it was added with the second addition of almond milk. Quote—

    1. Karen, sorry for the confusion. Yes, you are correct the sugar is added with the second almond milk. The first “sugar” was a typo and is supposed to be gelatin. “when the gelatin is dissolved”, add the remaining almond milk to the pan along with the sugar.
