If you are like me when you bake, you always bake extra, either to give to friends or to freeze for later. Sometimes I bake when I am the only one home and my eyes are bigger than my stomach, for instance when I made a loaf of banana bread a few weeks ago. I am not sure why I thought I needed to eat an entire loaf during the week. Needless to say I got a little tired of banana bread so I froze the leftover loaf and this weekend used it to make banana bread French toast. This is an easy French toast recipe that may just replace your regular bread recipe.

What you need to make banana bread French Toast
Banana bread French toast is a great way to use up leftover banana bread or stale bread. It is a decadent breakfast treat for weekends and holidays.
- 2 large eggs
- 1/3 cup whole milk or almond milk
- 1 teaspoon cinnamon
- 4 thick slices of leftover banana bread
- 1 teaspoon vanilla extract
- Unsalted Butter, for pan and toast
- Warm Maple Syrup
- Mixed berries
- powdered sugar

How to Make Banana Bread French Toast
- In large bowl mix eggs, milk and cinnamon, whisk until mixture is well blended. Pour into shallow bowl.
- Heat a large skillet over medium heat and add a tablespoon of butter or use non-stick spray.
- While the butter is melting dip banana bread slices into the custardy French toast batter.
- Allow bread to sit for a bit then flip.
- Place a slice of banana bread on the hot griddle or skillet. Cook until brown on one side, then flip bread over with a perforated spatula and cook until it’s golden brown on other side.
- Place on plates and serve with your favorite toppings.
- If you are making this bread for a crowd place the finished slices a baking sheet and place in oven or toaster oven to keep warm.

- Serve the slices of banana bread with a drizzle of pure maple syrup and a dusting of powdered sugar.
- Layer slices of bread with slices of fresh banana and top with peanut butter.
- Sprinkle with chocolate chip and a dollop of whipped cream.

- Use zucchini bread in place of banana bread
- Make a French toast casserole
- Top with melted butter, a sprinkle of brown sugar and bananas.
How to store French toast
Wrap leftover homemade banana bread French toast in plastic wrap or parchment paper and store in an airtight container. You can also freeze French toast for up to 3 months. To reheat place in the toaster over for a few minutes until warm.
