An easy apple artichoke salad with creamy blue cheese and walnuts. Perfect for dinner parties, lunch or holiday gatherings.

Ingredients for Artichoke Salad

  • 8 cups mixed salad greens 
  • 1 (14 ounce) jar marinated artichoke hearts, rinsed and halved or quartered
  • 1 large Granny Smith green apple thinly sliced
  • 1/23/4  cup blue cheese crumbles
  • 1 1/4 cup toasted walnuts, chopped

Salad Dressing Ingredients

  • 2 tablespoons apple cider vinegar
  • 2 teaspoons dijon mustard
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup extra virgin olive oil

Instructions

Combines the mustard, apple cider vinegar, olive oil, salt and pepper in a small jar. Shake vigorously until combined. Alternately, add the ingredients to a small bowl and whisk until combined. Set aside.

​Core the green apples then slice thinly. Remove the artichokes from the jar, and cut into quarters

On a large platter, or in a large bowl place the mixed salad greens. Then layer thin slices of apple and quartered artichoke hearts on top of the salad. Sprinkle with blue cheese crumbles and chopped toasted walnuts. Drizzle with vinaigrette and enjoy.

Notes

This salad is easy to customize to your taste, add your favorite blue cheese or feta as well as nuts.
