Apple Artichoke Salad
Do you like salads? Me too! I “threw” this salad together a few weeks ago after my husband complained that we had one too many jars of marinated artichokes in the cabinet. Since then I have been eating it on repeat, at least two or three times a week. It is an apple artichoke salad with blue cheese and walnuts then drizzled with cider vinaigrette. This salad is as delicious in the winter as it will be in the spring and summer and will become a family favorite.
With just a few ingredients you have a delicious salad that you can serve for a healthy lunch or dinner by adding a little or a lot of protein. Take it to your next potluck or even make it while you meal prep for the week.

It’s made with a jar of artichokes, tart Granny Smith apples, crunchy walnuts and creamy blue cheese. Not to mention that it takes less than 15 minutes of your time from start to finish.

Ingredients for Artichoke Salad
- 8 cups mixed salad greens
- 1 (14 ounce) jar marinated artichoke hearts, rinsed and halved or quartered
- 1 large Granny Smith green apple thinly sliced
- 1/2-3/4 cup blue cheese crumbles
- 1 1/4 cup toasted walnuts, chopped
Salad Dressing Ingredients
- 2 tablespoons apple cider vinegar
- 2 teaspoons dijon mustard
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 cup extra virgin olive oil
Directions for Salad
Combines the mustard, apple cider vinegar, olive oil, salt and pepper in a small jar. Shake vigorously until combined. Alternately, add the ingredients to a small bowl and whisk until combined. Set aside.
Core the green apples then slice thinly.Remove the artichokes from the jar, and cut into quarters
On a large platter, or in a large bowl place the mixed salad greens. Then layer thin slices of apple and quartered artichoke hearts on top of the salad. Sprinkle with blue cheese crumbles and chopped toasted walnuts. Drizzle with vinaigrette and enjoy.

Variation’s
- I made this salad with mixed spring greens but you could also use arugula, rocket leaves or spinach.
- Toasted pecans or candied pecans or walnuts would make a sweet addition to this salad.
- Add chick peas or white beans for protein and to bulk up the salad. Or add diced chicken.
- Gorgonzola or any other creamy blue cheese can be added. For those that do not like blue cheese add feta cheese or parmesan cheese.
- Add chopped fresh herbs.
- You could use fresh artichokes in this salad but it will be a lot more work.
- Skip the dressing and drizzle with fresh squeezed lemon juice.
How to store apple artichoke salad.
If meal prepping this salad keep the cheese, nuts and dressing separate. The salad will last longer if stored in an airtight container without dressing.
