Easy Cinnamon Apple Blondies with Vanilla Glaze

The fall season is almost upon us and if you don’t like pumpkin spice desserts, apple desserts are a great alternative. Me, I am an equal opportunity dessert lover, pumpkins or apples I love them both. Once the weather cools, apple crumble bars, slab apple pie and apple bread are on rotation at my house all season long. This Fall I am adding apple blondies to the mix.

You are going to love these easy cinnamon apple blondies with vanilla glaze, they are a cross between a bar and a cake. The tart apples, sweet cake and spicy glaze is perfection. This is one of my moms family favorites for pot lucks and holiday gatherings.

If you don’t know Sheri she is a professional photographer and the writer of the Sheri Silver blog. Today she is sharing Raspberry Oats bars, that are perfect for back to school lunches and weekend parties.

What you need to make apple blondies.

Simple ingredients are all that you need to make these apple cinnamon blondies.They are the perfect fall treat for weekend parties, family gathering and game days.

Instructions for Cinnamon Apple Blondies

Preheat the oven to 350F. Line a 11 x 7 pan with parchment paper or foil and spray with cooking spray. Leave an overhang on the sides to make it easier to remove the bars from the pan.

For the apple filling

In a pan on low to medium heat add the apples, brown sugar, butter, vanilla and cinnamon. Cook for 4-5 minutes. Remove from heat and allow the apples to cool completely.

For the bars

  • In a stand mixture fitted with a paddle attachment, cream the butter until light and fluffy. Add the brown sugar and granulated sugar and mix until combined. Stop the mixer  and with a spatula scrape the bottom and the sides of the bowl to incorporate the butter.
  • Then add the eggs one at a time, beat well after each addition.
  • Add the salt and vanilla, mix well.
  • In a medium bowl mix the dry ingredients, flour, baking powder, cinnamon and nutmeg together. Add the wet ingredients and stir the mixture until combined.
  • Add the cooled apple mixture and mix gently.
  • Using a spatula or your hands spread the batter evenly in the prepared pan.The batter is very sticky so it might be a little hard to spread. You can spray your clean hands with cooking spray to help spread the batter evenly in the pan.
  • Bake the bars in a preheated oven for 30-40 minutes or until the bars are golden brown and a skewer comes out clean. Baking time may vary depending upon your oven and how big you made your apple chunks.
  • Remove the pan from the oven and let cool on a wire rack. Once the bars are cooled spread with the vanilla glaze.
  • To make the glaze add the softened butter, cinnamon and the sifted powder sugar to a small bowl, mix well. This will make a paste, then add the milk or heavy cream and vanilla extract to get the glaze to the consistency that you like.
  • Pour the glaze on the blondies and use an off set spatula to spread evenly on the bars. Let sit for 20 minutes to set the glaze, then slice and enjoy the fruits of your labor.

Variations & Notes

  • Use a variety of apples including honey crisp apples, Granny Smith and pink lady. in your bars. For more information on the best cooking apples read this. 
  • Add maple syrup to the glaze instead of cinnamon.
  • Substitute apple pie spice in place of the cinnamon and nutmeg
  • Make brown butter apple blondies by browning the butter and then adding the apples, brown sugar and cinnamon.
  • These delicious treats are scrumptious on their own but you could make them extra special with a scoop of vanilla ice cream and a drizzle of maple syrup or homemade caramel.
  • Add a cup of caramel chips, white chocolate chips, butterscotch chips or nuts to the batter.
  • I like to put the bars in the refrigerator for 30 minutes to set the glaze and firm up the bars.

How to store apple blondies

Let the bars come to room temperature. Wrap in plastic wrap or store in an airtight container in the refrigerator. You can also freeze the bars for up to 3 months but I recommend freezing them without the glaze.

Ingredients

2 cus all purpose flour

1 tsp. baking powder

1/2 tsp. salt

1 cup butter softened

1/2 cup granulated white sugar

1 cup dark brown sugar

2 large eggs

11/2 tsp. vanilla extra

1/2 teaspoon cinnamon

Apple Filling

3 large chopped fresh apples

2 Tbsp. light brown sugar

1 Tbsp. butter

1 tsp. vanilla extract

1 teaspoon cinnamon

1/8 teaspoon nutmeg

Cinnamon Glaze

1 tablespoon softened unsalted butter

1 cup sifted powder sugar

1/4 teaspoon ground cinnamon

13 tablespoons milk or heavy cream

1/2 teaspoon vanilla extract

        1. Debra, while I like them both my favorite is the slab apple because of the memories of making it and enjoying it with my grandmother.
          Th apple blondies are much easier to make and are delicious as well.
