Ingredients
2 cus all purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 cup butter softened
1/2 cup granulated white sugar
1 cup dark brown sugar
2 large eggs
11/2 tsp. vanilla extra
1/2 teaspoon cinnamon
Apple Filling
3 large chopped fresh apples
2 Tbsp. light brown sugar
1 Tbsp. butter
1 tsp. vanilla extract
1 teaspoon cinnamon
1/8 teaspoon nutmeg
Cinnamon Glaze
1 tablespoon softened unsalted butter
1 cup sifted powder sugar
1/4 teaspoon ground cinnamon
1–3 tablespoons milk or heavy cream
chopped walnuts for garnish
Instructions
Preheat the oven to 350F. Line a 11 x 7 pan with parchment paper or foil and spray with cooking spray. Leave an overhang on the sides to make it easier to remove the bars from the baking pan.
For the apple filling
In a pan on low to medium heat add the apples, brown sugar, butter, vanilla and cinnamon. Cook for 4-5 minutes to soften a little. Remove from heat and allow the apples to cool completely.
For the bars
In a stand mixture fitted with a paddle attachment, cream the butter until light and fluffy. Add the brown sugar and granulated sugar and mix until combined. Stop the mixer and with a spatula scrape the bottom and the sides of the bowl to incorporate the butter.
Then add the eggs one at a time, beat well after each addition.
Add the salt and vanilla, mix well.
In a medium bowl mix the dry ingredients, flour, baking powder, cinnamon and nutmeg together. Add the wet ingredients and stir the mixture until combined.
Add the cooled apple mixture and mix gently.
Using a spatula or your hands spread the batter evenly in the prepared pan.The batter is very sticky so it might be a little hard to spread. You can spray your clean hands with cooking spray to help spread the batter evenly in the pan.
Bake the bars in a preheated oven for 30-40 minutes or until the bars are golden brown and a skewer comes out clean. Baking time may vary depending upon your oven and how big you made your apple chunks.
Remove the pan from the oven and let cool on a wire rack. Once the bars are cooled spread with the vanilla glaze.
To make the glaze add the softened butter, cinnamon and the sifted powder sugar to a small bowl, mix well. This will make a paste, then add the milk or heavy cream and vanilla extract to get the glaze to the consistency that you like.
Pour the glaze on the blondies and use an off set spatula to spread evenly on the bars. Let sit for 20 minutes to set, then slice and enjoy the fruits of your labor.
Notes
Make sure the apples are cooled before you add them to the batter.
