Baked Cambozola Blue Cheese with pecans and cranberries, the perfect appetizer to serve with a bottle of wine on a cold Fall or winter night.

  • Total Time: 25 minutes
  • Yield: 6-8 servings 1x

Ingredients

Scale

1/2 cup roughly chopped pecans

1/2 cup dried cranberries

2 teaspoons packed light brown sugar

1/4 teaspoon curry powder

pinch of kosher salt and black pepper

1 pound Cambozola Black Label cheese, rind removed and cubed

Sliced apples, pears and crackers of your choice for serving

Instructions

Preheat oven to 400. Combine pecans, cranberries, curry, brown sugar and pinch of salt and pepper in a small bowl. Set aside.

Place the cambozola on a cutting board. Using a sharp knife remove the rind from the cheese and cut into cubes.

Put the cheese in a one quart baking dish and top with the pecan mixture. Bake until the blue cheese melts and the nuts are toasted and golden brown, about 12 minutes.

Serve with sliced apples, pears, crackers or wide slices of bread.
