Instructions

  • Pre-heat oven to 350°F. Line a 9 x 5-inch loaf pan or mini loaf pans with parchment paper then spray with cooking spray.
  • For the streusel, in a small bowl mix together the all purpose flour, brown sugar, cinnamon and cold butter with a pastry blender, two forks or your fingers until crumbly.
  • Ina medium mixing bowl, mix 3/4 cup sugar, the oil and egg.
  • Combine the flour, baking soda, baking powder, spices and salt in a separate large mixing bowl.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Then fold in the walnuts and cranberries and apples.
  • Pour the batter into prepared pan, then top with streusel topping.
  • Bake the bread 50 to 65 minutes or until toothpick inserted in the middle of the loaf comes out clean.
  • Cool 10 minutes in the loaf pan then remove the loaf from the pan and let cool on a wire rack. Cool completely, about 1 1/2 hours, before slicing.
  • Note: Baking time will vary depending upon which size pan you use and your oven temperature.
