What you need for Cranberry Apple Bread
- 3/4 cup granulated sugar
- 1/2 cup vegetable oil
- 1 large egg
- 1 cup shredded peeled Granny Smith apples (about 1 medium)
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/8 teaspoon ground ginger
- 1/8 teaspoon freshly ground nutmeg
- 1/8 teaspoon ground allspice
- 3/4 cup chopped walnuts
- 1 cup fresh cranberries cut in half
Streusel Topping
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 1/2 tsp. cinnamon
- 4 Tbsp. cold butter, cut into small pieces
How to Make Cranberry Apple Bread
- Pre-heat oven to 350°F. Line a 9 x 5-inch loaf pan or mini loaf pans with parchment paper then spray with cooking spray.
- For the streusel, in a small bowl mix together the all purpose flour, brown sugar, cinnamon and cold butter with a pastry blender, two forks or your fingers until crumbly.
- Ina medium mixing bowl, mix 3/4 cup sugar, the oil and egg.
- Combine the flour, baking soda, baking powder, spices and salt in a separate large mixing bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Then fold in the walnuts and cranberries and apples.
- Pour the batter into prepared pan, then top with streusel topping.
- Bake the bread 50 to 65 minutes or until toothpick inserted in the middle of the loaf comes out clean.
- Cool 10 minutes in the loaf pan then remove the loaf from the pan and let cool on a wire rack. Cool completely, about 1 1/2 hours, before slicing.
- Note: Baking time will vary depending upon which size pan you use and your oven temperature.
