Good morning! Happy Cinco de Mayo and Derby weekend. Do you have plans to have a margarita or maybe even two this evening? Or are you saving yourself for juleps on Saturday while watching the Derby?

Nachos are one of my favorite things to eat and these Mexican Street Corn Nachos from Closet Cookinglook delicious and are on my list for tonight’s festivities. 

Crock Pot Carnitas from Host the Toast

What could be better than putting a meal in your crock pot and 6 hours later eating dinner? Especially if it is Crock Pot Carnitas from Host The Toast. I think these look delicious and would be an excellent  dish for tonight.

Do you like margaritas? I do but to be honest I like the slushy fruity ones best, my favorite is strawberry but tonight I think I am going to try this Tropical Pineapple Margarita Slushy from Whole and Heavenly Oven.

Of course we have to end the day with a little something sweet, so how about some Mexican Chocolate Pots de Creme from Delish.

  1. I love to experiment with carnitas recipes. No crockpot, but I put it in the oven at a low temperature, which does the same thing.
    Homemade tortillas, too. No wonderful Mexican tortillerias around here.
