Good Monday morning friends! How are you? Did you enjoy your Easter weekend? We had a wonderful weekend, Saturday it was a little chilly so the morning was spent by the fire reading and snuggling with the pups. I also dyed Easter eggs using a red cabbage! I’ve never dyed eggs naturally and now I think I will be using that method every year! As is it just my husband and I, I had to restrain myself from dying more than 12 eggs, after all I am not sure we want to be eating hard boiled eggs for every meal this week.  I was going to make almond sweet rolls but instead I decided to make my favorite pastry, a bear claw! I love bear claws and they are getting harder and harder to find at bakeries, maybe because they are so labor intensive. In any case I used this recipe  from Red Star Yeast and they turned out perfect, just the way I remember them. I will warn you if you decide to tackle this recipe it is a bit of a challenge.

Sunday, Easter was a picture perfect day! We lived streamed mass and then we had an Easter egg hunt for the three dogs, basically I filled up a bunch of plastic eggs with treats and set them on the rug. Oddly the puppy is the one that figured out that there were treats in the eggs and that it was a lot of fun because she was running around with the eggs, flipping them up in the air and when the treat fell out she would hurriedly gobble them up. It wasn’t until her fourth treat that the two older pups joined in. The rest of the day we sat outside and soaked up some vitamin D before coming in for dinner.

It was a beautiful, relaxing holiday weekend, the only things missing was family and that will come soon.
