  • Preheat the oven to 350 F. Prepare THREE, 8 x 4″ loaf pans with non-stick cooking spray and then line with a piece of parchment paper for easy removal.
  • Whisk the flour sugar, pepiats and salt in a small bowl bowl, Add the melted butter and stir with a fork or use your fingers to make crumbs. Set aside.
  • Whisk the dry ingredients, flour, baking powder, cinnamon ginger, cloves, nutmeg and salt in a large bowl
  • In a separate bowl, whisk the brown sugar, granulated sugar, pumpkin puree, oil, eggs, and vanilla extract.
  • Add the dry ingredients to the wet ingredients and mix until blended.
  • Pour the batter into the three prepared loaf pans. Spread the Pepita streusel mixture over the top of the loaves.
  • Bake the loaves 55-70 minutes in the preheated oven until they are golden brown and a skewer inserted into the center comes out clean.
  • Remove the loaves from the oven and cool on a wire cooling rack for 10 minutes. Then remove the loaves from the pan and let cool completely on the wire rack.

1 tablespoon plus 1 tsp baking powder

1 tablespoon ground cinnamon

11/2 teaspoon ground ginger

1/2 tsp. ground cloves

1/8 teaspoon nutmeg

11/2 teaspoon kosher salt

2 cups packed light brown sugar

1 cup granulated sugar

1 15. 0z can pumpkin puree

1 cup vegetable oil

5 large eggs

1 tablespoon pure vanilla extract

1/4 cup raw pumpkin kernels

1/2 teaspoon salt
