Ingredients
3 medium Raw Carrots
2 green onions, chopped
1/2– 1 teaspoon grated ginger
1 Tablespoon soy Sauce
1/2 Tablespoon sesame oil or extra virgin olive oil
1 Tablespoon honey
1 Tablespoon rice wine vinegar
1 Tablespoon lime juice
red chili flakes
Pinch of sea salt and pepper
Garnish with chopped fresh herbs, cilantro, parsley and seasame seeds
Instructions
Wash and peel the skin off the carrots, then continue peeling the carrots to make long thin ribbons. Place the carrots in a bowl and add the chopped green onion. Set aside.
In a small jar or a small bowl add the dressing ingredients, grated ginger, the sesame oil, rice vinegar, honey, lime juice, soy sauce, pinch of salt and pepper and red chili flakes. Mix well or if using a jar shake well.
Pour the dressing over the shaved carrots and green onions. Toss until the carrots are coated with the dressing. Top with a sprinkling of sesame seeds and cilantro.
Notes
There are endless variations to this raw carrot salad, put your own spin on the dressing and make it with more of a spick kick or none at all.
