Spiced Apple Bread with Maple Glazed Walnut Topping

This spiced apple bread is moist and flavorful and the addition of the maple glazed walnuts makes it extra special. Perfect for dessert or as a snack with a cup of tea.

Ingredients

2 large baking apples, peeled, cored and shredded

2 tablespoons sugar

1/2 cup brown sugar

1/4 tsp. sea salt

11/4 tsp. ground cinnamon

1/4 tsp.ground ginger

1/4 tsp. freshly grated nutmeg

11/2 cups of flour

1 tsp. baking powder

1/2 tsp. baking soda

1/4 cup vegetable oil

2 large eggs, lightly beaten

1 teaspoon vanilla extract

3/4 cup chopped nuts

Ingredients for Maple Glazed Walnuts

1/2 cup walnuts

12 tablespoons pure maple syrup

pinch of salt

Instructions

Preheat oven to 350 and be sure that the rack is in the center of the oven. Prepare a loaf pan(8 x 4 ) with cooking spray and line with parchment paper.

Peel and core the apples, then shred with a grater. Place the shredded apples in a bowl and add the white sugar, brown sugar, salt, cinnamon, ginger, and nutmeg. Mix well. Set the apples aside for 10 minutes

In a separate bowl whisk together the flour, baking powder and baking soda.

While you are waiting for the apple mixture prepare the maple walnuts. Preheat a dry skillet over medium-high heat. Add the maple syrup and the nuts, stir until the nuts are toasted  and the syrup is caramelized, the sprinkle with the salt. Remove from heat and place on a silphat baking sheet until cool. Once cool chop roughly.

After the apples have sat for 10 minutes add the oil, lightly beaten eggs, and vanilla to the apple mixture. Stir until all of the ingredients are blended.

Stir the flour mixture into the apple mixture, adding it in 3 parts. Make sure not to over mix, stir the mixture just until the flour disappears. Then fold in the nuts.

Pour the batter into the pan then top with the chopped maple glazed nuts. Place pan into oven and bake for 55-75 minutes, check the bread after 30 minutes, if the top is browning too quickly cover with aluminum foil.

The bread is done, when a tester inserted into the center comes out clean. Let the bread cool on a wire rack for 10 minutes, then remove the bread from the pan and cool completely. Dust with powder sugar and enjoy.

Notes

You can customize the bread any way that you like, if you do not like walnuts use pecans, or don’t use any nuts.
