This Spiced Apple Bread with Maple Glazed Walnut Topping is moist, delicious and so easy to make. It’s basically an apple quick bread(no yeast) with the maple glazed walnuts. The walnut topping adds an additional fall flavor and crunch to the bread. Not to mention they make the bread look a little more fancy. If you are not a fan of maple then skip it, the apple bread will still be scrumptious.

Remember Fall isn’t just about pumpkins! Apples are a quintessential Fall fruit and are perfect in pies, cakes and breads. There are 2,500 varieties of apples grown in the United States but only 100 varieties are grown commercially. Honestly, I don’t think I have ever seen more than 5-6 varieties in my local market. What about you, how many are sold in your local shops?

With all of the varieties available I think I am going to have to branch out from my favorites this year and try something new.

How to Make Spiced Apple Bread with Maple Glazed Walnut Topping

The ingredients for this spiced apple bread are pretty simple and you probably already have them in your pantry. Just be sure to read through the recipe before you start so that you are sure you have everything you need.

Preheat the oven to 350. Lightly grease and line your pan with parchment. This will ensure that the bread is easily removed to cool.

Peel and core the apples, then shred with a grater. Place the apples in a bowl and add the sugars, spices and salt, mix well then set aside for 10 minutes.

Whisk the flour, baking powder and baking soda together.

Prepare the maple nuts while you let the apples sit for 10 minutes.

Then add the oil, eggs and vanilla to the apple mixture. Add the dry ingredients into the wet, in 3 parts, do not over mix.

Pour into pan, top with maple nuts.

Bake the bread for 55-75 minutes. Then cool and enjoy.

How to Store and Freeze Spiced Apple Bread

The bread is best eaten on the day it is baked. But it can be stored wrapped in cling wrap or placed in a bag for up to 3 days.

To freeze leftover baked apple spice bread, wrap the entire loaf or individual pieces in plastic wrap. Then place in a freezer bag or wrap in aluminum foil. You can freeze the loaf for up to 3 months.

When you are ready to enjoy the bread remove from the freezer, and place the refrigerator to defrost. The bread is delicious lightly toasted with butter with a cup of tea or coffee.

This spiced apple bread is moist and flavorful and the addition of the maple glazed walnuts makes it extra special. Perfect for dessert or as a snack with a cup of tea.

Ingredients

2 large baking apples, peeled, cored and shredded

2 tablespoons sugar

1/2 cup brown sugar

1/4 tsp. sea salt

11/4 tsp. ground cinnamon

1/4 tsp.ground ginger

1/4 tsp. freshly grated nutmeg

11/2 cups of flour

1 tsp. baking powder

1/2 tsp. baking soda

1/4 cup vegetable oil

2 large eggs, lightly beaten

1 teaspoon vanilla extract

3/4 cup chopped nuts

Ingredients for Maple Glazed Walnuts

1/2 cup walnuts

12 tablespoons pure maple syrup

pinch of salt

Instructions

Preheat oven to 350 and be sure that the rack is in the center of the oven. Prepare a loaf pan(8 x 4 ) with cooking spray and line with parchment paper.

Peel and core the apples, then shred with a grater. Place the shredded apples in a bowl and add the white sugar, brown sugar, salt, cinnamon, ginger, and nutmeg. Mix well. Set the apples aside for 10 minutes

In a separate bowl whisk together the flour, baking powder and baking soda.

While you are waiting for the apple mixture prepare the maple walnuts. Preheat a dry skillet over medium-high heat. Add the maple syrup and the nuts, stir until the nuts are toasted  and the syrup is caramelized, the sprinkle with the salt. Remove from heat and place on a silphat baking sheet until cool. Once cool chop roughly.

After the apples have sat for 10 minutes add the oil, lightly beaten eggs, and vanilla to the apple mixture. Stir until all of the ingredients are blended.

Stir the flour mixture into the apple mixture, adding it in 3 parts. Make sure not to over mix, stir the mixture just until the flour disappears. Then fold in the nuts.

Pour the batter into the pan then top with the chopped maple glazed nuts. Place pan into oven and bake for 55-75 minutes, check the bread after 30 minutes, if the top is browning too quickly cover with aluminum foil.

The bread is done, when a tester inserted into the center comes out clean. Let the bread cool on a wire rack for 10 minutes, then remove the bread from the pan and cool completely. Dust with powder sugar and enjoy.

Notes

You can customize the bread any way that you like, if you do not like walnuts use pecans, or don’t use any nuts.

  1. This looks so delicious! I prefer apple to pumpkin 🙂 Even though we live in WA I only see 5 or 6 apple varieties at stores as well. But some of the produce stands sell apple types that aren’t in grocery stores. Some varieties are also grown for export only.
