Good morning! In the Fall my weekends are all about nesting and that means hot soups, pastas and comfort food on the weekends. Typically on Sunday I make some sort of pasta, the aroma wafting through the house makes it feel cosy and reminds me of Sundays at home with my mom.

A couple of weeks ago I made this scrumptious and easy Spicy Sausage Rigatoni.
Spicy Sausage Rigatoni
Recipe from Spicy Southern Kitchen
Ingredients
12 ounces rigatoni pasta
1 medium onion chopped
1 pound of hot italian sausage
3 cloves of garlic, minced
1 14oz can of diced tomatoes, undrained
1 8 oz, can tomato paste
1/2 teaspoon dried basil
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon black pepper
1/2 cup heavy cream
1/2 cup parmesan cheese
Heat the olive oil in a large pan and add the pinions, cook until soft. Then add the sausage. Break into small pieces and cook until no longer pink. Add the garlic and cook for 1 minute. Remove pan from stove, drain off any excess fat. Add the diced tomatoes, tomato paste, basil, salt, pepper, and pepper flakes, simmer until thick about 15-20 minutes. Then add cream and simmer an additional 5 minutes, turn heat to low, add parmesan cheese and stir.
While sauce is simmering cook pasta according to directions. Drain pasta when finished and place in a large bowl. Pour sauce over pasta, stir and serve and enjoy!

This dish reminds me of a long passed friend. She used to make something similar to this and invite me over for lunch. Sweet memories. Thanks for bringing them to the forefront. Hadn't thought of this in years.

That looks delicious. Being a 'scratch' type of cook, I can offer a real simple recipe for homemade Italian hot sausage that will take 10 minutes to prepare – with much better taste and at a fraction of the cost:
2 lbs pork butt
1 tsp black pepper
3 tsp kosher salt
½ tsp sugar
2 tsp fennel seeds, cracked
½ tsp coriander
½ tsp caraway
3/8 cup cold water
For medium hot – add 1 tsp cayenne pepper
For hot Italian – add 2 tsp cayenne pepper
Grind the meat on medium, or ask you butcher to do it, add the spices, mix thoroughly by hand until the meat feels sticky and you are done.
