Good morning! In the Fall my weekends are all about nesting and that means hot soups, pastas and comfort food on the weekends. Typically on Sunday I make some sort of pasta, the aroma wafting through the house makes it feel cosy and reminds me of Sundays at home with my mom.
A couple of weeks ago I made this scrumptious and easy Spicy Sausage Rigatoni.
Spicy Sausage Rigatoni
Recipe from Spicy Southern Kitchen
12 ounces rigatoni pasta
1 tablespoon olive oil
1 medium onion chopped
1 pound of hot italian sausage
3 cloves of garlic, minced
1 14oz can of diced tomatoes, undrained
1 8 oz, can tomato paste
1/2 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon black pepper
1/2 cup heavy cream
1/2 cup parmesan cheese
Heat the olive oil in a large pan and add the pinions, cook until soft. Then add the sausage. Break into small pieces and cook until no longer pink. Add the garlic and cook for 1 minute. Remove pan from stove, drain off any excess fat. Add the diced tomatoes, tomato paste, basil, salt, pepper, and pepper flakes, simmer until thick about 15-20 minutes. Then add cream and simmer an additional 5 minutes, turn heat to low, add parmesan cheese and stir.
While sauce is simmering cook pasta according to directions. Drain pasta when finished and place in a large bowl. Pour sauce over pasta, stir and serve and enjoy!
