Chocolate Chip Cookies S’mores
Summer is s’more season, although if you lived with my mom, roasting marshmallows is not limited to summer, or the outdoors. My mom loves to put marshmallows on a skewer and roast them over the gas flame of the cooktop or to pop them into the microwave.
There are lots and lots of recipes for s’mores but recently I tried a recipe that substituted homemade chocolate chip cooked for graham crackers. I will never go back to graham crackers again. These s’mores are over the top fabulous. I will warn you now they are addicting but DO NOT be tempted to eat more than one. they are too rich, even for the chocoholic in your life.
Why You Will Love This Recipe
- A chewy chocolate chip cookies with a gooey marshmallows sandwiched with a chocolate bar.
- Campfire nostalgia, no campfire needed. This recipe captures the fun of traditional s’mores but in a more accessible form, so you don’t have to build a fire to enjoy them. Toasting marshmallows inside turns the kitchen into your own little campfire retreat.
- Whether you’re baking for family, friends, or a casual get-together, these s’mores cookies are adaptable. You can swap chocolate types or add nuts, and their size makes them easy to pack for picnics or lunchboxes.

- homemade chocolate chip cookies
- Bakery cookies or Nestle Tollhouse dough from the refrigerator section
- Chocolate Layer
- Hershey Bars
- peanut butter cups
- Marshmallows, homemade marshmallows(this is my favorite recipe)
Directions for Chocolate Chip Cookie S’mores
- Gather your ingredients, lay a piece of chocolate, peanut butter cup or whatever else you like onto one the cookies, then set aside.
- Next take a skewer or a stick and roast the marshmallow to your desired hue. I prefer golden brown and not charred marshmallows but there are some that love them well done.
- Once the marshmallow is toasted place the marshmallow with the stick still attached onto the cookie and chocolate bar, top with another cookie, squish it down a little bit and pull out the stick. Wait a few minutes for the chocolate to melt and the marshmallow to cool so that you do not burn your lips or mouth.
- That is it, easy and delicious summer treats!
Note: If you are making this with kids using an open flame or campfire make sure to watch them so that they do not get to close to the flames/fire or from munching on a hot marshmallows.
Recipe Variations
- Try using white chocolate chips, peanut butter chips, or even a mix of dark and milk chocolate for a new flavor dynamic.
- Chopped nuts like pecans, walnuts, or almonds add a crunchy texture that pairs delightfully with the soft marshmallow.
- Use vegan cookie dough, dairy-free chocolate, and vegan marshmallows for a plant-based version that doesn’t sacrifice flavor or fun.
- A little flaky sea salt on top before baking enhances the chocolate’s sweetness and adds a gourmet touch.
- Use smaller cookie dough portions to create bite-sized s’mores that are perfect for parties or sharing.
What To Serve With Chocolate Chip Cookie S’mores
- A glass of cold milk naturally pairs with the sweet, rich flavors of these cookie s’mores and balances out the sugar with its creamy simplicity.
- Double down on the chocolate and marshmallow vibe with a warm cup of hot cocoa for an extra cozy treat.
- The tartness of fresh berries like raspberries or strawberries cuts through the richness of the chocolate chip cookies and sweet marshmallows.
- A scoop of vanilla ice cream alongside your cookie s’mores melts gently into the warm treats for an indulgent experience.
