Classic Rice Krispies treats are good but these chocolate peanut butter treats are over the top scrumptious. Perfect when you want a sweet treat on a hot summer day but don’t want to turn on the oven or you just want to make something easy and fast. The best part, the recipe uses simple ingredients that you probably already have them all in your pantry.  Your kids and grandkids can help and that is always fun, especially licking the spoon.

Directions

  • Line an 8 x 8″ square pan with tin foil or parchment paper and spray with cooking spray.
  • In a large saucepan over medium heat, melt butter, creamy peanut butter, and chocolate.
  • Add the mini-marshmallows to the peanut butter mixture and stir with a wooden spoon until melted and smooth.
  • Remove from the heat and stir in the cereal.
  • Pour the cereal mixture into the prepared pan. Spread in an even layer using a rubber spatula or the butter wrapper, but don’t squish the cereal treats down too much.
  • Chill the pan for 20 minutes.
  • Add the chocolate and coconut oil to a microwave safe bowl, microwave for 1-2 minutes, stirring after ever 30 seconds until mixture is smooth.
  • Spread the melted chocolate over the top, drizzle with melted peanut butter and add a bit of flaky salt if you like Return the pan to the refrigerator until chocolate is set.
  • Cut and enjoy.

Variations

This recipe is delicious just the way it is but there are endless ways to customize it to your taste.

  • Instead of Ride Krispies use, Cocoa krispies, Special K, Corn Flakes, Peanut Butter Captain Crunch
  • Substitute Crunchy peanut butter, almond butter or cashew butter
  • Milk chocolate, dark chocolate and peanut butter chips can also be used for the topping
  • Add a sprinkle of sea salt

Tips

  • Mini-marshmallows melt faster but if you do not have them use the large marshmallows.
  • If you want to skip to layer of chocolate then drizzle the treats with the peanut butter instead, they still taste delicious.
  • Don’t like peanut butter? Chocolate Rice Krispie treats are delicious too!

How to store Rice Krispie treats

Wrap the treats in plastic wrap or store in an airtight container.

Can I use natural peanut butter?

You can but the texture will be different, I use Jiff or Skippy.
