Easy Blueberry Crumble Bars with Crumble Topping
Have I got a quick, easy, delicious dessert for you, even easier than your favorite blueberry pie recipe. Blueberry Crumble bars are melt in your mouth delicious with a sweet burst of sweet blueberries and a buttery crumble topping. These bars are one of my go-to desserts, especially if I need something at the last minute. This is the perfect dessert to make and enjoy during blueberry season. Try these easy blueberry crumble bars plain or with a scoop of ice cream.
These bars could not get any easier as the base and the topping are on one in the same. You simply mix everything in a bowl, press half in a pan, spread with blueberries and top with the crumble. Then bake and enjoy!

What you need to Make Blueberry Crumble Bars
This recipe uses simple ingredients to create a family-favorite. A perfect way to use up those sweet summer berries!
Ingredients
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp. baking powder
- 2 cups all purpose flour
- 1/2 teaspoon cinnamon
- 1 cup (2 sticks) cold butter cut into small chunks
- 1 egg, lightly beaten
- 1/2 tsp. vanilla extract
Filling

Directions
- Preheat oven to 375 F. Line a 9 x 13 baking dish with foil or parchment paper then spray with nonstick cooking spray. Set aside.
- In a medium bowl combine the filling ingredients, the 4 cups of blueberries, sugar and corn starch, and lemon juice. Mix lightly. Set the blueberry mixture aside.
- In a large bowl mix the dry ingredients, granulated sugar, brown sugar, cinnamon, baking powder and flour. Cut in the butter, egg and vanilla using a pastry cutter until the mixture resembles course crumbs.
- Pat half the mixture into the bottom of the prepared pan in an even layer, then pour over the juicy blueberry filling. Top the blueberry layer with the remaining crumb mixture.
- Bake for 45 minutes or until bars are golden brown. Bake time may carry depending upon your oven. Remove from oven, let cool on a wire rack.
How do you store blueberry crumb bars?
To store leftover blueberry bars, make sure they are at room temperature and then place in an airtight container. For longer storage you can freeze these bars for up to 3 months.
