Golden Healing Soup

I’ve been doing a lot of baking and cooking lately and one of my favorite things I have made is this Golden Healing (Cauliflower) Soup. This recipe is easy, it only takes about 25 minutes(minus the chickpea roasting), it is delicious and good for you too! A great recipe to keep for the coming months when you might feel run down or just need an easy and delicious meal.

The best part of this recipe, it is delicious! I’ve made it 3 times in the last month and I will be making it again this week. Golden healing soup is perfect for this time of the year when we might indulge in too much of everything, candy, cocktails, rich foods.

What are the benefits of cauliflower?

CauliflowerĀ is a member of the cruciferous vegetable family along with broccoli, cabbage and Brussel sprouts. This versatile veggie can be eaten raw, cooked, in soups, made into pizza crust, and “mashed potatoes.”

In fact cauliflower is a “super food” and is rich in vitamin C, vitamin B6, vitamin K, folate, potassium, magnesium, phosphorus, and fiber. Low in sodium, calories and carbohydrates cauliflower is delicious addition to your meal plan.

Golden healing cauliflower soup, easy to make, delicious and good for you too!

Ingredients

INGREDIENTS

1 tablespoon extra virgin olive oil

1/2 onion, chopped

2 cloves garlic, chopped

1 small head cauliflower, chopped

pinch cayenne pepper(optional)

pinch of red pepper flakes(optional)

1 Tablespoon ground turmeric

2 cups unsweetened coconut milk(in the can)

25 cups vegetable stock

1 teaspoon sea salt, more to taste

freshly ground pepper

ROASTED CHICK PEAS

1 can chickpeas rinsed and drained

cumin, turmeric, curry powder of any combination of these spices

olive oil

Instructions

In a large pot heat the oil over medium heat. Then add the onion, garlic, cauliflower, cayenne pepper, red pepper flakes, and turmeric. Cook for 10 minutes or until very fragrant.

Add the coconut milk, 2 cups of the vegetable stock and the salt and pepper. Simmer until the cauliflower softens, about another 10 minutes.

Transfer the soup to a blender, and blend to a creamy consistency. I blend the soup in my Vitamix BlenderĀ if I want it really creamy or I use my emersion blenderĀ in the pot if I want the soup a little more chunky which is what I did for this batch.

Transfer the mixture back to the pot and use the additional stock to get the desired consistency of soup that you like. Then add a squeeze of lemon and salt to taste and garnish with chickpeas(recipe below).

Roasted Chickpeas

Preheat oven to 400. Line baking pan with parchment paper. Rinse and drain the chickpeas, pour them onto the pan, then sprinkle with spices and drizzle with olive oil. Stir on the pan and roast for 30-40 minutes stirring every 10 minutes until the chickpeas are crispy.

 

Notes

NOTE: Be careful when blending hot liquids in your blender, never fill the blender more than 1/2 full and follow the directions that come with your blender.

  1. I’m wondering if it might be just as delicious cold? I think it could be. I’m going to make up a big batch of the chick-peas to use instead of croutons and also a healthy snack.

  2. It is rainy and cold (50’s) here today in Seattle. We actually have a fire lit and a bowl of soup would be wonderful right about now!

  4. I enjoy many of the recipes you post but find it very difficult to save them. You don’t provide a print option and I can’t easily copy them because the ads are interspersed within the recipe. Any suggestions?

      The post has been updated and you can now print the recipe.
      Some of the recipes are from past years where I did not have a recipe card installed on the blog. I am slowly updating the posts and hope to have recipe cards available on them all.
