Good morning! How was your weekend? Did you watch the Derby? I have to be honest I was a little let down by the end result although I know why the decision was made.

On Sunday we celebrated Cinco de Mayo and served a few things I think you might like, Machaca (slow roasted brisket), served with pickled red onions, and queso fresco, creamy pinto beans and raspberry margarita cream tarts for desserts.

Mother’s Day is Sunday so today I will be spending the day baking my gifts for both my mother and mother-in-law. Neither one needs anything so along with their cards they will be getting a box of their favorite sweet treats. For my mom that is, poppyseed coffeecake, Fairy Food, caramel corn and Triple Cinnamon Coffeecake.

And for my mother-in-law, a Cinnamon cream cheese coffeecake and a Cherry Streusel Coffeecake along with a big box of her favorite chocolate sea salt caramels.
The rest of the week will be busy with work and preparing for guests that we have coming to town.
