Good morning! How was your weekend? Did you watch the Derby? I have to be honest I was a little let down by the end result although I know why the decision was made.

On Sunday we celebrated Cinco de Mayo and served a few things I think you might like, Machaca (slow roasted brisket), served with , and queso fresco, creamy pinto beans and raspberry margarita cream tarts for desserts.

Mother’s Day is Sunday so today I will be spending the day baking my gifts for both my mother and mother-in-law. Neither one needs anything so along with their cards they will be getting a box of their favorite sweet treats. For my mom that is, poppyseed coffeecake, Fairy Food, caramel corn and Triple Cinnamon Coffeecake.

And for my mother-in-law, a Cinnamon cream cheese coffeecake and a Cherry Streusel Coffeecake along with a big box of her favorite chocolate sea salt caramels.
The rest of the week will be busy with work and preparing for guests that we have coming to town.
