A weekend wrap-up and a celebration of National Pi Day!

Good Monday morning friends, how was your weekend? Did you remember to “spring ahead?” I am tired, anyone else? It was cold and rainy here for most of the weekend so we were not able to accomplish much outside. I have to keep reminding myself that it is March and that there is still time to prune, fertilize and plant for the season. I look outside on a bright sunny day and I feel like everything is supposed to be green with colorful flowers blooming and swaying in the breeze. I am impatient and excited and wish I could snap my fingers and it would all be done, but then I would miss all of the fun.

The war rages on in Ukraine and life moves on for the rest of us. It is a strange feeling to wake up, read the latest news, go for a walk, make a hot chocolate and start the day. I am not sitting in a cold, damp bomb shelter hopping to survive another day. I have no idea what is it like to sneak out and try to find food to feed my family and then hope I can make it safely back to the shelter. Over the last two weeks it has really been a struggle to show up here and write a post, it seems trivial. Do you feel the same?

Saturday evening I heard an explosion, and then 5 minutes later a bunch of sirens, I actually thought it was the news until a friend sent a text to ask if we were ok. Apparently just up the street from us there was an explosion and then a house burst into flames. Sadly the house is completely destroyed, and the family dog was overcome by smoke. The firefighters were able to get the dog out of the house but he was not able to be resuscitated. The family was not at home, but the dad was called by the neighbor and when he arrived at the scene to see his house in flames and his pet gone, he was overcome and had to be taken to the hospital. Everything this family owns is gone, their photos, clothing, home, dog, car, etc. The neighborhood is doing their best to help but how do you help someone replace EVERYTHING? They are thankful to be alive but my goodness, they have the clothes on their backs and nothing more. Life can change in an instant and sometimes it sucks and sometimes it is great and more often than not it is somewhere in between these two points.

Let’s move on to something a little more up beat, today is National Pi Day and even though it is in celebration of mathematics most people like to celebrate it with pie. Do you have a favorite pie? I am partial to Banoffee pie, which is an English dessert with bananas, caramel and cream and pumpkin pie. If you would like to try it here is a recipe for Banoffee Pie in a Jar.
What did you do this weekend? Did you get any snow? The bomb cyclone seemed to affect many of us this weekend with cold, rainy, snowy weather. Sunday is the first day of Spring and Thursday is St.Patrick’s Day, two more causes for celebration.

Where is the caramel in this dessert? No directions are given.
The “caramel” is made from a can of sweetened condensed milk which is boiled. It is similar to dulce de leche. This dessert is best eaten the day it is made and does not freeze well. You can buy dulce de leche, or make your own which is what I do. There are several methods to make your own, I use this one, if you are afraid to boil a closed can you can use one of these methods(links in original post). Or you can purchase your own dulce de leche.
YES. I can imagine how difficult it has been for you to show up and write a post, and YES I feel the same exact way.

Oh my gosh, your neighbors home is gone, how horrid, and their fur baby. I can’t even begin to imagine how horrible
they must be feeling. I think you must go into a state of shock. I will add them to my prayers. My list keeps growing.
On a positive note, I so love the flowers you post, such a uplifting feeling.
