Roasted Blueberry Yogurt Parfait

Good morning friends! I hope that you are staying safe from Covid and the weather. We are bracing for a lot of wind and rain and hopefully nothing else. Did you have a nice weekend? I am still having a hard time grasping that it is August, anyone else? 

This weekend in addition to trying a few more tomato recipes I have been roasting, grilling and smoking fruits and vegetables. This is one of those recipes. 

If you love fruit and yogurt than you will enjoy this scrumptious Roasted Blueberry Yogurt Parfait. It is a nutritious, refreshing breakfast on a hot summer day. You can also garnish your yogurt with honey or granola. The berries are also perfect over homemade vanilla bean ice cream, served on pound cake or even on pancakes, waffles or toast in place of jam.

Roasted Blueberries

21/2  cups of washed blueberries, divided

sugar

pinch of salt 

juice of 1/2 lemon

Preheat the oven to 350. Line a baking sheet with parchment paper. Rinse the berries and place 2 cups of the berries on the baking sheet. Sprinkle with sugar and pinch of salt. (You can also use maple syrup in place of the sugar but still use the pinch of salt). Roast for 15-20 minutes, until the berries start to pop and release their juices. Remove from oven and pour into a bowl. Be careful so that you do not burn yourself.  Add the remaining 1/4 cup of berries and the juice of the lemon, mix and then let cool. You can store these in the refrigerator for a week. 

To make a parfait:

 Place your choice of yogurt in a jar, or glass, this is Greek yogurt

Add roasted berries

drizzle with honey

Sprinkle with granola or nuts
