Good morning friends, Christmas is just over a day away. Are you ready? Or are you frantically buying, wrapping and baking? I can’t help you with the buying unless you want to get your gifts after Christmas, but I can help you make an easy, decadent chocolate treat to add to your holiday dessert table. My “go to” Hershey’s Perfectly Chocolate cupcakes topped with green vanilla buttercream and sprinkles will be the hit of your dessert table.
These scrumptious chocolate cupcakes have been a family favorite for years. The recipe comes from the side of the little brown Hershey’s cocoa powder can and is so easy and delicious. If you haven’t made the cake or cupcakes before you need to try the recipe!

Tips for Christmas Cupcakes
- Baking is a science so be sure that your baking soda and baking powder are not expired
- You can add additional flavor to your cupcakes with chocolate chips or even crushed candy canes
- If you don’t like buttercream frosting make the perfectly chocolate frosting! It is my favorite frosting ever. You will lick the spoon and the bowl.
- Get creative, pipe little stars to make a Christmas tree, or add red food coloring and make a Santa hat.
- Use your favorite frosting recipe or skip the frosting altogether and simply dust with powdered sugar.
- Have fun and make memories with your kids or grandkids while making these cupcakes.

Hershey's Perfectly Chocolate Cake
Ingredients
Method
- Heat oven to 350°F. For a 2 layer cake, grease and flour two 9-inch round baking pans. For cupcakes, line a cupcake pan with liners, set aside.
- Stir together sugar, flour, HERSHEY’S Cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin).
- FOR CAKE: Pour batter into prepared pans. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks
- FOR CUPCAKES: Bake cupcakes 22-25 minutes. Remove cupcakes from the baking tin and let cool on wire rack.
- Make frosting of your choice and decorate or simply dust with powdered sugar and enjoy.
- In the bowl of a stand mixer fitted with a paddle attachment whip the butter for 7-8 minutes until light and fluffy. Scrape the sides of the bowl frequently. Add the powdered sugar, vanilla, and heavy cream, mix on low until everything is incorporated and then increase the speed to medium, beat until light and fluffy.
- Add a few drops of food coloring to your frosting or a little dark green gel food coloring. This is a bit trial and error until you get the desired color. Once you have the color green that you like, add the frosting to a piping bag fitted with a large star tip. Pipe the frosting onto the cupcake, you can make whatever design you like. Then "dust" with a few sprinkles.

Holiday Thoughts
These last few weeks have been a blur of parties, decorating, baking, shopping, wrapping, packing and lots of fun. Christmas my friends is mere hours away. If your holiday to-do list has gotten away from you, or the holiday isn’t shaping up to be what you thought, give yourself some grace, let things go.
You don’t have to have 10 perfect gifts(Free Gifts are better), and stocking stuffers and 20 kinds of cookies along with cinnamon rolls for breakfast. It is not your job to make everyone happy.
Do the things that bring you joy and let the rest go. Yes believe it or not moms you are allowed to have fun and be joyful on Christmas and not run ragged and exhausted.
Take these next couple of days to enjoy your family and friends. Go out and see the Christmas lights, sit in front of the tree you lovingly decorated and enjoy a mulled wine or cup of hot chocolate. Or do a puzzle and play a game with your kids or grandkids.
Savor the season and the reason for the season.
