Old Fashioned Bread Recipe

I was perusing Pinterest recently and found this recipe from The Notebooks of Dulcie May Booker by Natalie Oldfield. This easy little bread recipe is basically an old fashioned quick bread with a little yeast. It is old fashioned, hearty and delicious bread. When you make it try it warm slathered in honey butter you will love it.

Ingredients

  • 1 1/4 cups warm water (105-115 F)
  • 2 tsp active dry yeast (1 packet)
  • 1 tablespoon of honey
  • 1 cup of all purpose flour
  • 1 cup of whole wheat flour
  • 1 cup of rolled oats, not instant
  • 11/2 tsp fine grain sea salt
  • 2 tablespoons butter melted for brushing

Direction for Bread

  • Preheat oven to 350 degrees F and place rack in the middle of the oven. Prepare a loaf pan with cooking spray.
  • In medium bowl sprinkle instant yeast onto the warm water and stir until the yeast dissolves. Stir in honey and set aside for a few minuted until the yeast blooms and swells, about 5-10 minutes.
  • In a large mixing bowl, mix all purpose flour, wheat flower, oats and salt. Add the wet mixture to the dry mixture and mix well.
  • Brush a loaf pan with melted butter, or room temperature butter, turn dough into tin, cover with a damp cloth and let dough rise in a warm place for 30 minutes.
  • Bake bread for 35-40 minutes, until golden brown and pulling away from the sides of the pan. Remove from oven, turn bread out onto a wire rack.

Variations

  • Make mini loaves.
  • Add dried cranberries or nuts to bread dough.
  • Sprinkle the top with sunflower seeds, pumpkin seeds.
  • Add fresh herbs, rosemary, oregano, thyme.

Serving Suggestions

  • Top with homemade jelly or jam.
  • Drizzle with Honey.
  • Serve with a salad or soup.
  • Toast bread in a toaster oven in a slice of cheese on top

Ingredients

1 cup of whole wheat flour

1 cup of rolled oats, not instant

11/2 tsp fine grain sea salt

2 tablespoons butter melted for brushing

Instructions
