WEEKEND MEANDERINGS

Good Saturday morning to you friends. It’s time for Weekend Meanderings with Kim and Juliet. Join us as we share all of the things that piqued our interests and caught our eye this week.

I spent this week in Denver and Winter Park with my husband and a group that he has been friends with since grade school. Each year we pick a spot to spend a week together and this year it was Colorado.

The weather was beautiful and the leaves were just starting to turn. Being from the Midwest and having spent most of my adult life on the East Coast, Fall colors are a range of orange, red, yellow and everything in between. In Colorado it is a sea of green and gold, different from what I am used to but beautiful.

We spent most of our time at a private ski club up in Winter Park, although we did not ski obviously. We hiked, biked and just enjoyed the beauty of nature. We saw elk, fox, and other little critters but sadly no moose, visited a National Park or two, ate lots of good food because we had a private chef, and talked and laughed until we cried. It was a wonderful week with friends celebrating long friendships and honoring the ones we lost this past year.

Let’s get ready to welcome Fall

It’s almost Fall Y’all! Sunday is the first day of Fall, are you excited? Me too, it’s my favorite time of the year and I love everything about it. After a long hot summer I am ready to relax, regroup and get into cozy mode. I’ve pulled out my warm throws, added more pillows to the bed and the couches, and of course have a list of comfort food, cookies, bread and more for the upcoming chilly days and holidays.

Celebrate sweater weather and the changing season with a playlist. These are a few of the songs that I have on my list. If you like jazz I found this video on Youtube as well.

Cozy Fall Food

Cool crisp days and nights are ahead and that means soups, stews and comforting food to feed our body and soul over the coming months.

Here are a few recipes that you might want to pin so that you can make them later.

Layered chili with jalapeño cornbread is one of our all time favorite things to make in Fall and Winter and this is the recipe we use all of the time.

Chicken or turkey pot pie. An easy and delicious meal with vegetables, chicken, turkey, creamy gravy and crispy homemade crust. This is a great meal to make ahead and freeze.

Try this creamy chicken, cauliflower and leek soup. You will be making this on repeat it is so good.

Beef stew is a family favorite, add a loaf of crusty bread and you are all set.

If you like hot cocoa make this mix and keep it on hand for a warm and delicious drink.

Fall DIY

During lockdown I started doing easy DIY projects and crafts. These matchbooks were one of the things that I made. You can make a few and add them to any candles or candle holders that you are giving to family and friends for the holidays. Or customize them to your own decor.

  1. I’ve never been to Colorado, but I hear it is gorgeous. I love chili, but would have to skip the jalapeno cornbread. I also love stew. Add pumpkin pie and I’m ready for fall! I think those matchbooks would make a nice little craft for me to tackle.
