Homemade Peanut Brittle Candy(no candy thermometer!)

Today I am going to share the easiest homemade peanut brittle recipe with you, no candy thermometer needed! This recipe uses just a few ingredients to create candy shop candy at home, perfect to gift to family and friends for the holidays.

This recipe could not be easier, you basically place three ingredients into the pan and let it do its thing. Occasionally you swirl the pan until the mixture looks caramel brown. I should warn you that the difference between caramel brown and burnt is about 20 seconds, so you do have to watch the mixture or you will have a burnt mess. You can also swap the peanut for any nuts you like, almonds, pistachios, etc, it is delicious with any combination of nuts or just your favorite one.

Directions

  • Line a baking sheet with foil, or parchment and butter it. Place it near the stove so that it is handy when you need to pour the hot mixture.
  • Put the sugar, water, and corn syrup into a saucepan. Bring the mixture to a boil gently, then turn the heat up and let it boil for 8-10 minutes, swirl the pan, do not stir, a couple of times until the syrup has turned a golden brown. Be careful not to burn it.
  • Take the pan off of the heat and with a wooden spoon, stir in the nuts, then vanilla, butter and baking soda. The mixture will bubble up so be careful. Be sure to mix well so that the baking soda is incorporated into the sugar mixture
  • Pour the mixture onto the prepared pan and spread it out a little.

Let the candy cool and then break into pieces.

How to store peanut brittle and nut brittles

You can store peanut brittle and other nut brittle candy in an airtight container or box.

To give nut brittles as a gift place in cellophane bags and tie with ribbon, place in decorative holiday tins or add to a white candy box and tie with ribbon.

An easy and delicious homemade peanut brittle that is perfect for holiday gift baskets.

    Ingredients

    Scale

    1 cup sugar

    1/4 cup water

    1/2 cup light corn syrup

    1 cup peanuts( or nuts of your choice)

    1 1/2 teaspoons vanilla extract

    1 Tablespoon soft butter

    11/4 teaspoon baking soda

    Instructions

    Notes

    Hot sugar is dangerous. Be careful when making and pouring this mixture. Keep children away from hot sugar mixture.

    1. Looks so yummy, I do agree with you, home made gifts are always so wonderful to give and receive, especially when they are all bundled up in a pretty box tied with beautiful ribbon. What more could anyone want.
